These recipes are all fresh and easy-to-make at home to wow your guests. They are also best sellers to our catering customers!

Caribbean cooking is a fusion of many different countries- French, Dutch, Spanish, Chinese, African- just to name a few. Of course, Caribbean cookery relies on local ingredients- fresh fish, limes, oranges, goat, coconuts, citrus, pineapple, allspice, thyme, Scotch Bonnet peppers, rice, potatoes and mangoes.

We will be cooking four of the most famous and iconic Caribbean dishes- Jerk Chicken Skewers, Fish Tacos, Red Coconut Curry and Cuban empanadas. Enjoy!

THE MENU

Red Coconut Curry– simmered with potatoes, golden beets, bell peppers, coconut milk, baby spinach and island seasonings

Char-Grilled Jerk Chicken Skewers– zesty and tender from a 2 day marinade in our sweet, smoky, citrus-y BBQ sauce. Thyme paintbrush. (read Felicity Cloake’s article in the guardian)

Fish Tacos- mango BBQ salmon, pineapple slaw, cilantro, lime wedges

Cuban Empanadas– golden discs stuffed with picadillo- a Cuban-style chili made with ground beef, diced golden raisins, chopped dill pickles and island seasonings. Saison eggwash. Orange-habanero crema dipping sauce.
